  • 2 tbsp all-purpose flour (for thickening)
  • Salt and black pepper to taste
  • ½ cup frozen peas
  • ½ cup sweetcorn
For the crust
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the filling

Heat butter and oil in a pan over medium heat.

Sauté onions, garlic, ginger and Scotch bonnet for 2 minutes.

Add carrots and green bell pepper, cooking for another 3 minutes.

Stir in kebab seasoning, nutmeg, thyme and tomato paste.

Sprinkle in flour, stirring for 1 minute to coat everything.

Gradually whisk in chicken broth and evaporated milk, letting it thicken.

Add shredded chicken, peas and sweetcorn. Simmer for 5 minutes. Season to taste.

Remove from heat and let cool slightly.

Preheat oven to 200°C (400°F).

Pour filling into a baking dish or ramekins.

Roll out puff pastry and place over the dish. Press edges to seal.

Brush with egg wash.

Cut small slits on top for steam to escape.
